All messengers have this feature. But what guarantee is there that the Google keyboard is not transmitting data to their servers in "incognito" mode?

Utilise an open-source keyboard, being the obvious answer. You can also watch network activity to ascertain which routes keyboard data is potentially being sent through, since the 'app' itself doesn't transmit data when in incognito (but may do via inconspicuous ways.)
